Our 2017 Cabernet is the eighth release and reflects our winemaking skills and commitment to applying simple, traditional winemaking techniques to deliver what we believe is a fine example of the Margaret River style.
Colour: Deep purple red with a dark cherry core
Aroma: Lifted, fresh but complex. Layered with oak and classical Cabernet perfume.
Palate: Medium bodied, tightly wound with fine layers of oak overlaying dark Cabernet fruits. It is clearly varietal with finely polished, persistent tannins and savoury fruit sweetness to resolve the finish. Those who cellar in the longer term will be rewarded.
Food matching: Char grilled meats.
Cellaring: Five years and more to see the wine fully expressed.

Vintage notes: Quite a cool year has defined our reds by very lifted aromatic notes. The palate is fine and very persistent Another very good year in Margaret River, producing red wines that are soft, fleshy and expressive.
Composition: 100% Cabernet Sauvignon
Winemaking: We employed small batch winemaking, selecting multiple parcels that would often accommodate a few barrels. The batches were fermented, and cap plunged twice daily. After gentle pressing the wine was transferred to oak barrels for malolactic fermentation and further maturation, after which the best batches were selected and assembled together before bottling.
