WINEMAKER’S NOTES

It is an ode to tradition in many ways, chiefly its ability to bottle age and have sufficient intensity of flavour and complexity to stand the test of time. By using Chenin Blanc grown in the Wilyabrup sub-region of Margaret River and applying hand harvesting, whole bunch pressing, barrel fermentation and oak maturation we have been able to make a serious food wine with a fine flint–like mineral qualities and persistent, intense fruit flavours with a tight long acidity to finish.

TASTING NOTES

Colour:  Pale - medium yellow straw.

Aroma:  A complex wine with aromas of stone fruits, citrus, pear, green apple,  and quince, lifted floral notes. A clear oak contribution with spicy nutmeg and cinnamon oak.

Palate:  Intense stone fruit flavours and depth, toasty oak, phenolic grip with a very long tight minerally acid finish.

Food matching: A wine that holds it own across any flavoursome dishes. Enjoy with pork chops.

Cellaring:  Twelve months will see some interesting bottle development but will continue for many years to reward those with patients.
