WINEMAKER'S NOTES

Fresh in the glass with a fine creamy palate and fine bead, this Sparkling has been made with pristine cold–pressed free run juice fractions, cold fermented under pressure and bottled fresh to maintain a fine mousse.

TASTING NOTES

COLOUR: Pale green.

AROMA: Soft fragrant aromatic fruit, crisp and fresh.

PALATE: Fine mousse, explosive fresh flavours burst on the palate with a creamy, tight acid finish and fine lingering fruit.

FOOD MATCH: Fresh Exmouth prawns.

WINEMAKING: Picked in the cool of night, grapes were cold pressed and the clear juice fermented with natural yeasts. Once secondary fermentation was completed, a small dosage was added to balance the dry wine.
