COMPOSITION: 78% Chenin Blanc, 20% Sauvignon Blanc, 2% Semillon
VINTAGE NOTES: The 2015 vintage witnessed a quite cool and benign ripening period for whites, while reds were picked early with moderate temperatures and fine breezy and sunny days.
WINEMAKING: Picked in the cool of night, grapes were cold pressed and the clear juice fermented with natural yeasts. Once secondary fermentation was completed, a small dosage was added to balance the dry wine.
