2015 Backyard Stories Cabernet Sauvignon
Our 2015 Cabernet is the sixth release red in a range of wines that reflect our winemaking skills and our commitment to finding the best fruit and applying simple, traditional winemaking techniques to deliver what we believe is a fine example of a style whilst remaining classical of the Margaret River region and the quality it delivers.
Colour: Deep purple red with a dark cherry core
Aroma: Lifted, fresh but complex. Layered with oak and classical Cabernet perfume.
Palate: Medium bodied, with fine layers of oak overlaying dark and ripe Cabernet fruits with clear varietal definition. Finely polished, this wine has persistent tannins and savoury fruit sweetness to resolve the finish. Those who cellar in the medium term will be rewarded.
Food matching: Char grilled meats.
Cellaring: Four years to see the wine fully expressed.

Region: Margaret River
Vintage notes: Another very good year in Margaret River, producing red wines that are soft fleshy and expressive. A warm start was followed by a fine weather.
Composition: 95% Cabernet Sauvignon 5% Malbec
Winemaking: We employed small batch winemaking, selecting multiple parcels that would often accommodate a few barrels. The batches were fermented and cap plunged twice daily. After gentle pressing the wine was transferred to oak barrels for malolactic fermentation and further maturation, after which the best batches were selected and assembled together before bottling.
