COLOUR: Very pale green
AROMA: Complex and earthy with nettle aromas and some bready overlay. Immediately engaging and different, offering complexity and intrigue.
PALATE: Complex and savoury with some flint; textured and sour creamy. Fine and rich middle palate leading to a fine tangy finish.
FOOD MATCH: Shortbreads at one end, cheddar on the other.
CELLARING: Will be interesting over time

VINTAGE NOTES: The 2017 vintage was a cool weather -wise and quite late. It has been a very good year for whites. Flavours are at the aromatic / vegetal end of the spectrum together with some refreshing acidity. As it would happen, and despite some well justified concerns during the middle of the vintage , we were subjected to a long Indian summer after Easter, seeing reds ripen fully.
COMPOSITION: 100% Sauvignon Blanc
WINEMAKING: Hand-picked fruit was chilled overnight and whole bunch pressed and the resultant unclarified juice was allowed to ferment completely naturally with the only intervention being temperature control of the ferment. A light oak treatment together with some aging on gross lees in stainless steel. No sulphur was added whatsoever until the wine was prepared for bottling.
