Our 2016 Cabernet is the seventh release and reflects our winemaking skills and commitment to applying simple, traditional winemaking techniques to deliver what we believe is a fine example of the Margaret River style.
COLOUR: Deep purple red with a dark cherry core
AROMA: Lifted, fresh but complex. Layered with oak and classical Cabernet perfume.
PALATE: Medium bodied, tightly wound with fine layers of oak overlaying dark and ripe Cabernet fruits It is clearly varietal with finely polished, persistent tannins and savoury fruit sweetness to resolve the finish. Those who cellar in the medium to longer term will be rewarded.
FOOD MATCH: Char grilled meats.
CELLARING: Four years and more to see the wine fully expressed.
REGION: Margaret River
VINTAGE NOTES: Another very good year in Margaret River, producing red wines that are soft fleshy and expressive. A warm start was followed by fine weather.
COMPOSITION: 90% Cabernet Sauvignon, 5% Malbec, 5% Merlot
WINEMAKING: We employed small batch winemaking, selecting multiple parcels that would often accommodate a few barrels. The batches were fermented, and cap plunged twice daily. After gentle pressing the wine was transferred to oak barrels for malolactic fermentation and further maturation, after which the best batches were selected and assembled together before bottling.
